- 1 packet Chipotle & Garlic Dip Mix
- 3 to 5 pound beef roast
- 16 oz. Root Beer (soda/pop)
- 1 medium onion, roughly chopped
- 1 green bell pepper, roughly chopped
- 1– 10 oz can Rotel® style tomatoes* (mild or hot)
- 2 Tbls. Cider vinegar
* We prefer mild Rotel® tomatoes.
Rinse beef roast, place in a large zipper style plastic bag. Add packet of Chipotle & Garlic Dip Mix, 16 oz of Root Beer, and 2 Tbls of cider vinegar. Close bag. Mix well, allow to marinate overnight (minimum 8 hours) in refrigerator. Preheat oven to 350 degrees (or use a 5-6 quart slow cooker). Place beef roast and all of the marinade into the dutch oven styled pan (with oven-safe lid) or into slow cooker. Add chopped onions and green peppers on top of beef roast. Carefully pour tomatoes (including juice) on top. Cover pan and bake for 4 hours or until beef roast is tender.
Slow Cooker: Allow to cook approx. 6 hours on high or until beef is tender and will easily shred, or cook on low for 8-9 hours. Serve with tortillas, rice an beans.
Chipotle Beef Queso
Ingredients Needed:
- 1 packet Chipotle Garlic Dip Mix (dry)
- 1/2 lb. ground beef, cooked & drained
- 1-1/2 cups (12oz.) cream cheese
- 4 oz. Velvetta cheese
- 1 can (14.5 oz.) petite diced tomatoes, drained
Combine all ingredients in a small slow cooker (2.5 qt. minimum size). Turn slow cooker on high and cook for 1 hour or until cheeses are melted. Stir to mix and turn to low or warm. Serve with tortilla chips.
Chipotle & Garlic Marinated Pork Loin
- 1 packet Chipotle & Garlic Dip Mix
- 1/2 cup white wine vinegar
- 1 cup orange juice
- 3 lb. boneless pork loin roast
- 1 tsp. ground cumin
- 2 cups pineapple juice
- large oven roasting bag
Directions:
Rinse pork roast and place in oven roasting bag. Add all other ingredients and mix well by slightly rolling roast around in bag. Seal bag with twist tie, place in a shallow baking dish or pan and place in refrigerator to marinate. Allow to marinate a minimum of 6 hours*, turning meat occasionally.
*(Marinating overnight 12 to 24 hours is best.)
Preheat oven to 350°. Remove roast from refrigerator and pierce top of bag according to oven bag directions. Leave roast in bag, place in baking dish in oven and bake for 3 hours or until tender. Allow roast to set and cool for 15 minutes. Slice or shred roast to serve.
Chipotle & Garlic Meat Rub & Spread
- 1-1/2 Tbls. Chipotle & Garlic Dip Mix
- 8 oz. cream cheese, softened
- 1 to 2 Tbls. milk
Empty entire contents of Chipotle & Garlic Dip Mix into a Ziploc® bag. Shake until all ingredients are mixed well. Add 1-1/2 Tbls. of Chipotle & Garlic Dip Mix to the cream cheese; mix well. May add 1 to 2 Tbls. of milk to thin. Chill overnight or minimum of 4 hours. Delicious with bagels!
Meat Rub:
- 1-2 Tbls. Chipotle & Garlic Dip Mix, dry (depending on meat quantity)
Rub dry mix onto chicken, beef or pork before grilling, baking or roasting.
